Black Bean and Corn Salad Serves: 12
Ingredients:
- 1 29-ounce can black beans, rinsed and drained
- 2 cups frozen corn, thawed
- 1 red bell pepper, finely diced
- 1/2 cup red onion, finely diced
- 1/2 cup fresh cilantro, chopped
- 2 small limes, juiced
- 3 Tbsp olive oil
- ½ tsp cumin
- ¼ tsp garlic powder
- ¼ tsp black pepper
- ¼ tsp cayenne pepper (optional)
Directions
- In a medium bowl, combine beans, corn, red pepper, red onion and cilantro.
- In a small bowl, whisk together remaining ingredients and pour over bean salad. Toss to coat.
