Turkey Tostadas (Servings: 4)


Ingredients:

  • 2 cups cooked light-meat, skinless turkey, cut into bite-size pieces
  • 2 tablespoons taco seasoning (optional: substitute in chili powder for less sodium)
  • 1 cup water
  • 4 corn tortillas
  • 1/2 cup low-fat or fat-free refried beans
  • 1/4 cup low-fat Monterey Jack cheese, shredded
  • 1 cup tomatoes, chopped
  • 1 cup lettuce, shredded
  • 2 tablespoons onion, chopped
  • 1/4 cup taco sauce
  • Plain low-fat or fat-free yogurt (optional)
  • Guacamole (optional, or mashed avocado)
  • Cilantro, chopped (optional)

Directions:

Wash and prepare vegetables. In a large skillet over medium heat, combine turkey, taco seasoning and water. Bring mixture to a boil, reduce heat, and simmer 5 minutes, stirring occasionally. Place tortillas on a cooking sheet. Bake at 375 degrees for 4-7 minutes or until they start to get crisp. Spread tortillas with one-quarter of the beans. Top with one-quarter of the meat mixture and the cheese. Return tortillas to oven to cook for 2-3 minutes until cheese melts. Top with tomatoes, lettuce, onions and taco sauce. Garnish with yogurt, guacamole and cilantro if desired.
